Homemade berry marshmallow on agar-agar is a simple recipe for a delicacy from “Dobryk”. Use agar-agar from the “Dobryk” company to prepare marshmallows – this is a guarantee of an ideal result.

Wild blueberries need to be sorted and washed. Blend with a blender and strain through a sieve.
Put it to a saucepan and cook for 20-30 minutes until a thick puree is formed. Add 100 g of sugar to the hot puree, stir until the sugar is completely melted and leave to cool to room temperature. When the puree has cooled, transfer it to the bowl of a blender and beat at maximum speed.
Prepare sugar-agar syrup: pour water into a saucepan and add “Dobryk” agar-agar. Bring to a boil. Add 200 g of “Dobryk” organic sugar. Bring to a boil while stirring. DO NOT stir after boiling. Boil the syrup to a temperature of 110°C. As soon as the syrup boils, start whipping the berry puree, add 1 egg white, beating at low speed, gradually raising it. The mixture increases in volume. Without turning off the mixer, add the sugar-agar syrup in a thin trickle. Pour the mixture down the side of the bowl. Beat for another 5-7 minutes. The marshmallow mass should increase in volume.
Put the finished mass to a pastry bag and place the halves of the marshmallows on baking sheets lined with parchment. Leave for 12-16 hours until completely solidified (NOT in the refrigerator, but at room temperature).
