Chocolate orange cake with autumn decor

Biscuit

  1. Eggs – 4 pcs.
  2. Organic sugar “Dobryk” – 125 g
  3. Flour – 100 g
  4. Baking powder “Dobryk” – 4 g
  5. Organic cocoa powder “Dobryk” – 15 g
  6. Oil – 40 g
  7. Orange juice – 30 g
  8. Orange zest

Cream Cheese

  1. Butter 82% – 150 g
  2. Creamy cottage cheese (Philadelphia) – 250 g
  3. Organic sugar powder “Dobryk” – 75 g
  4. Orange zest

Ingredients:

Orange marmalade

  1. Orange puree – 250 g
  2. Organic sugar “Dobryk” – 50 g
  3. Agar-agar “Dobryk” – 10 g

Biscuit syrup

  1. Organic sugar “Dobryk” – 90 g
  2. Water – 100 g
  3. Chocolate liqueur – 50 g

Ganache for flattening the cake

  1. Chocolate 56% – 185 g
  2. Cream 33% – 90 g
  3. Butter – 105 g
  4. Confectionery glucose – 22 g

Preparation:

  1. First you need to beat the eggs and sugar until fluffy, about 5-7 minutes.
  2. Combine dry ingredients, sift, add portions to the egg mass, then add oil and boiling water.
  3. For an 18 cm mold, 2 biscuits are required. We bake for 15-20 minutes. at t 180 degrees.
  4. To prepare the cream for our cake, you need to beat the butter at room temperature until fluffy, add the powdered sugar and beat again.
  5. Add orange zest and add some cream cheese. Mix the resulting puree with sugar and agar.
  6. Bring to a boil and cook, stirring occasionally, for 2-3 minutes.
  7. We spread our resulting consistency into a mold of the desired diameter and put it in a cold place to thicken.
  8. To flatten the cake, prepare a chocolate ganache. To do this, melt the chocolate, heat the cream with glucose and mix everything together at a temperature of 40 degrees. Add butter at the end. After a while (when the ganache is infused), cover the cake.
