  • Cocoa butter – 100 g


Lemon mousse:

  • Milk – 80 g
  • Lemon juice – 30 g
  • Gelatin food “Dobryk” – 8 g
  • Cold water – 35 g
  • Cream 33% – 200 ml
  • White chocolate – 150 g
  • Cocoa butter – 10 g

Lemon cream

  1. Soak gelatin food “Dobryk” in cold water. Mix eggs with organic sugar “Dobryk” and add lemon juice.
  2. Boil to a temperature of 82 ° C, add gelatin and strain the mass. Add the zest of one lemon and butter, beat thoroughly with a blender.
  3. Pour the finished mixture into cake tins on ½.

Lemon mousse

  1. Heat the milk, add the swollen gelatin food “Dobryk”.
  2. Melt white chocolate with cocoa butter, add to gelatin mass. Mix thoroughly, add lemon juice.
  3. Cool to 28 ° C, mix with whipped cream.
  4. Pour into molds. Cool until completely solidified (you can in the freezer).

Chocolate glaze

  1. Melt the chocolate. Heat the cocoa butter separately and add to the melted chocolate.
  2. Dip chilled desserts in chocolate glaze.
  3. For decoration we use confectionery “Dobryk”.
