Tangerine cake

Bright and original cake for the festive New Year’s table. We are preparing a mandarin cake together with TM “Dobryk”. Cooking will take a long time, but the result will amaze you and your guests.

You will need a lot of ingredients —>

Ingredients

Biscuit:

Mandarin kurd:

 

 

  • Egg yolks – 8 pcs.
  • Butter – 120 g
  • Peel tangerines – from 5 pcs.
  • Fresh mint – 6-8 leaves

Cream:

Ganash for alignment:

  • Milk chocolate – 185 g
  • Cream 33% – 90 g
  • Butter – 105 g
  • Confectionery glucose – 22 g

 

Prepare the biscuit dough

  1. Heat the milk and butter until smooth.
  2. Beat egg whites with half the organic sugar, with the other half of the organic sugar beat the cream.
  3. Add a third of the meringue to the yolks, add the dry ingredients. Mix part of the dough in milk with melted butter and return to the dough. At the end, enter the remaining meringue.
  4. Divide into two baking trays, sprinkle with powdered organic sugar and bake at 180 C for 10-15 minutes. Remove, cool.

Preparation:

Mandarin kurd

  1. Alternately mix all ingredients (except oil and mint), boil for 2 minutes, rub through a sieve, cool to 35 ° C.
  2. Add butter and finely chopped mint. Beat with a blender.

Cream

  1. Whip the cream and powdered sugar, add the mascarpone and beat again with a mixer.

 

Cake

  1. Grease the cakes with tangerine curd on top of the cream, cut into 6 strips of 9.5 cm, form a roll, place in a pastry ring with a diameter of 18 cm.
  2. Leave in the refrigerator for a few hours.

Ganache for flattening the cake

  1. Smear the cakes with tangerine curd on top of the cream, cut into 6 strips of 9.5 cm each, form a roll, place in a confectionery ring with a diameter of 18 cm.
